Slow Cooker Chicken

Equipment
- 1 Slow Cooker
Ingredients
- 1 whole chicken organic if possible
- 1/2 cup butter flavoured with organic herbs and spices, Mingle BBQ seasoning or just salt
- 1 drizzle olive oil
- 1 whole lemon
- 2 whole onions peeled and halved
- 1 tbsp salt himalayan rock salt
Instructions
- Set slow cooker on high
- blend herbs of choice with butter
- loosen skin from breast, taking care to keep it intact
- stuff the butter and herb mix under the breast skin
- put the lemon inside the chicken's cavity
- drizzle oil all over the chicken
- rub salt and additional herbs over the outside of the chicken (i.e. a BBQ mix of paprika ect)
- place onion halves into the base of the slow cooker and place the chicken on top
- cook for 3-4 hours on high or until cooked
Notes
When the chicken is cooked the meat will start to fall away from the bone. If you are unsure, use a thermometer at the thickest part to check it has reached 75 degrees.
Ensure any herbs and spices you select are organic and fresh where possible, or high quality dried options with no additives.
